Combine all the seasoning in a small bowl and season the salmon fillets with half of the seasoning mix
Heat the oil in a large skillet on medium-high heat and sear the salmon skin-side down for about 2 minutes on each side or until cooked to your liking. Set the fillets aside
In the same skillet, melt the butter and add the diced onion and garlic. Sauté until the onions are translucent and garlic is fragrant
Add the mixed peppers and cook until crisp tender
Add the tomatoes, coriander and the remaining seasoning along with a crushed beef cube. Cook until the tomatoes begin to break down
Add the washed rice, salt and toast for about 1 minute. Pour in the water, stir well and let it come to a boil. Once boiled, reduce the heat to low and cover with a lid or aluminium foil and let it simmer for 20 minutes
Uncover the rice and fluff it using a fork. Serve hot with the salmon and enjoy!
